Mexican Rice
(2 side servings)

Ingredients
Pre-cooked rice (I make 1.5 cups cooked rice, 3/4 uncooked)
Olive oil
1/2 chopped onion
Fresh or canned chopped tomatoes
Mexican spice mix (I used the Old El Paso Taco Mix)
Cumin
Salt
Tabasco
Cilantro
Directions
This is all per your taste, but this is what I do:
1. Heat olive oil (1 tbsp) in a pan or wok. Add the onion and cook for about 5 minutes. Add the rice and cook about 10 minutes, mixing often to release any moisture.
2. Add some chopped tomatoes (without the juice) and cook another 5 minutes, stirring often.
3. Add about 1 tsp Mexican seasoning and a good few dashes of cumin, some salt and a few drops of Tabasco sauce. Mix it all up and cook another few minutes.
4. Sprinkle with cilantro and enjoy!
