Applesauce Quick Bread

Ingredients:

1/2 cup (125 ml) light tasting olive oil
1 cup (200 g) brown sugar
2 large eggs
1 cup (250 ml) applesauce
1/4 cup (60 ml) yogurt
1 tsp (5 ml) vanilla extract
1 & 3/4 (210 g) cups all-purpose flour
1 tsp (5 g) baking soda
1/2 tsp (2.5 g) baking powder
Pinch ground cinnamon
Pinch ground nutmeg
Pinch salt 

Directions

1. Preheat the oven to 350 F (175 C or gas mark 4). Line the bottom of a 9X5-inch loaf pan with parchment paper and grease the sides with oil.

2. In a large bowl, whisk together the oil and brown sugar. Add the eggs, whisking until smooth. Add the applesauce, vanilla, and yogurt and mix until well-combined.

3. Add the flour, baking soda, baking powder, cinnamon, nutmeg and salt and stir just until combined; don't over-mix the batter.

4. Pour the batter into prepared loaf pan and spread into an even layer.

5. Bake for 45-55 minutes or until a toothpick inserted near the center comes out clean or with just moist crumbs.

6. Remove from oven. Run a knife gently around the side of the pan and then remove bread onto a cooling rack.

This moist and flavorful applesauce quick bread is the perfect fall treat – lightly spiced and so easy to make. It's good for about 5 days sealed at room temperature and a week or so in the fridge. Quick breads always freeze well.
